Paella de Alicante

Description:
Paella is probably Spain's most famous dish. This recipe is genuine from Alicante. It is usually made with rabbit and snails, but it can also be cooked with chicken instead.

Recipe method:

  1. If using rabbit, boil the meat for 8 minutes with an inch of rosemary.
  2. Add some olive oil to the paella pan. Fry a striped tomato for around 5 minutes. Add the saffron threads and two spoons of meat broth.
  3. In the same pan, fry the sliced red pepper and the meat.
  4. Once it is fried set aside the red pepper.
  5. Add water (should be double the amount of Bomba Rice) and bring to the boil with the meat in the paella plan, then add the Bomba Rice.
  6. Leave for 20 minutes over a medium heat.
  7. When the pan is running out of broth, add the red pepper.
  8. The Paella will be ready in a couple of minutes. All you need to do now is to take the paella off the heat, cover it with a cloth and leave to rest for 5 minutes.
  9. Bring the pan to the table. Let your guests help themselves.


Ingredients and Quantities:
1 chopped rabbit
400grams / 14oz Bomba rice
8tbsp of olive oil
1 red pepper
1 tomato
1 pinch of saffron stigmas 
1 pinch of rosemary
