Chicken and Chorizo Roast

Description:
Chicken and chorizo roast is a rustic dish with personality and a great flavour combination. It’s very easy to cook and the oven does most of the job.

Recipe method:

  1. Preheat the oven to around 180˚C/200˚C. Place non-stick baking paper onto a baking tray.
  2. Season the chicken pieces with salt and black pepper.
  3. Cut the potatoes into wedges or slices
  4. Slice onions, ensuring not too thin
  5. Deseed 2 red peppers, cutting into think slices
  6. Place all ingredients together in the oven and add whole garlic cloves (with skin), cayenne, thyme, cherry tomatoes, rosemary, asparagus spears, deseeded red peppers. 
  7. Sprinkle with a splash of extra virgin olive oil, cooking for about 30 minutes at 200˚C.
  8. Add the chopped chorizo, olives and white wine.
  9. Cook it in the oven for 30–35 minutes or until the chicken is cooked throughout and the chorizo is crispy.
  10. Tip! - you could put some seasoning on the top, such as thyme and rosemary, to make it even tastier.


Ingredients and Quantities:
1.6kg / 56oz chicken, (cut into chunks)
250grams / 8oz chorizo sausages
90grams / 30z green olives
250grams / 8oz cherry tomatoes
8 garlic cloves
1 tbsp olive oil
8 medium potatoes
2 onions
rosemary
thyme
cayenne
Handful Of asparagus spears, (with the woody ends snapped off)
2 red peppers
150ml / 5fl oz of white wine
