Chickpeas and Chorizo

Description:
A traditional Spanish chickpeas and chorizo meal. It can be served as a meal or as a tapa.

Recipe method:

  1. It is advisable to soak the chickpeas in cold water overnight.
  2. Slice the chorizos and chop the parsley.
  3. Drain the chickpeas placing into a saucepan, add the cinnamon stick and cloves, then fill a pan with fresh cold water.
  4. Bring to the boil and then simmer covering the pan until the chickpeas are cooked and softened, (approximately for 45 minutes). If needed, you can add more water while cooking. Drain.
  5. Heat the extra virgin olive oil in a frying pan. Then, add the garlic and onion, frying off quickly, stirring occasionally until all ingredients are mixed well together and softened.
  6. Add the chorizo for 3-4 minutes until slightly browned.
  7. Add the drained chickpeas and stir for 2-3 minutes until heated through.
  8. Add salt and black pepper, sprinkle with the chopped parsley and serve.


Ingredients and Quantities:

250grams / 80z dried chickpeas
2 cloves
1 cinnamon stick
4 tablespoons extra virgin olive oil
1 garlic clove
1 small onion
350grams / 12oz chorizo
3 pinches of salt
2 pinches of black pepper
1/3 / 43grams / 1.5oz parsley
