Chorizo Omelette

Description:
Another version of the traditional Spanish Omelette, with chorizo and Manchego cheese.  Serve as a dish or as a ‘Tapa’.

Recipe method:

  1. Thinly slice the chorizo, spanish onions and potatoes. Heat 20ml of extra virgin Olive oil in a pan just over medium heat, then add the chorizo slices, fry until softened and lightly browned.
  2. Remove the chorizo slices from the pan and set aside.
  3. Heat 20ml olive oil in the same pan and cook the onion and potatoes for 2-3 minutes.
  4. Reduce heat to low, cover and cook, checking occasionally until the vegetables are softened.
  5. Whisk eggs with the Manchego cheese in a bowl and season well with Salt and freshly grounded black pepper.
  6. Stir the cooked chorizo into the eggs, adding the onions and potatoes, mix everything together carefully.
  7. Wipe the pan and heat 20ml extra virgin olive oil. Pour in the mixture and cook at a low heat. Once that side is done, turn it over or place it under a hot grill to finish the top.


Ingredients and Quantities:
40ml / 1fl oz extra virgin olive oil
100grams / 3oz cured chorizo
1 Small spanish onion
300grams / 5oz potatoes
4 eggs
50grams / 1oz Manchego cheese
Salt and Freshly grounded black pepper
