Blue cheese made from cows’ milk. It is then cured for 4 months in natural limestone caves where develops its typical mold. It has an intense penetrating aroma, well-developed and buttery flavour with creamy and crumbly texture. This blue cheese is traditionally wrapped with maple tree leaves. IGP stands for Protected Geographical Indication.
