Taken from the outside of the ribcage, this fan-shaped slice of pork (abanico means “fan” in Spanish) is celebrated for its rich marbling, bold taste, and supreme tenderness. Raised free range in the oak-filled dehesas of southern Spain, our 100% pure-bred Ibérico pigs enjoy a natural diet of sweet acorns, herbs, and grasses—infusing the meat with a unique nutty depth and melt-in-the-mouth succulence.
