Calamares a la Romana or battered squid rings are at the epicentre of the Spanish tapas culture. They have a wonderful texture and crispy golden batter which makes them irresistible with a few wedges of lemon and served with some Alioli. Fry them in hot oil (180ºC) for 2 to 3 minutes until golden brown or cook for 11-12 minutes in the oven at 210 ºC.
